Аннотация: A pig fattening trial was conducted for testing the effect of various rations of the same energetic value used by Austrian farmers for pig fattening on carcasses, especially on fat quality. Five groups in each case with twelve pigs were fattened from 37 kg to 110 kg live weight at Ritzlhof experimental station. Applied rations differed primarily in concentration of maize, barley and wheat, respectively. Four groups had a percentage of maize between 65 and 45. In group 5 the whole maize was replaced by wheat. The group without maize had 9% lower daily weight gain and feed efficiency than the other groups. The differences between the groups in carcass yield were not significant. The content of saturated fatty acids in subcutaneous and abdominal fat was obviously higher in the group without maize and the ratio of polyunsaturated to saturated fatty acids was smaller than in the other groups. So, in this group also the melting points of fat were higher and the subjectively determined consistency was better. The use of high amounts of maize injured the fat consistence. This caused an abounded appearance of quality defects by subjective view of backfat. Quality of abdominal fat in all groups was good. Аннотация: In a pig growing trial the use of rations with few (KG) and many components (VG) was tested for the effect of pork and lard composition. The ration of VG caused lower daily gain (765 vs. 746 g) and a higher feed conversion rate (2.83 vs. 2.96 kg), but had no effect on pH-value, conductivity of ham and M. l. dorsi and drip-losses. The organoleptic test showed that pork of M. l. dorsi of RG tended to have better taste and softness than VG, but tenderness of M. l. dorsi of VG was better than of KG. The fatty acid patterns of fat tissues were depending on the rations. The intramuscular fat of M. l. dorsi of VG showed a higher proportion of unsaturated fatty acids (C[18:1], C[18:2]) than KG. Otherwise the backfat and abdominal fat of VG had a higher amount of saturated fatty acids (C[16:0], C[18:0]) than KG. The Fatty Acid Ratio of fat of M. l. dorsi in VG was significantly higher than in KG. Therefore the use of many components for rations for growing pigs causes pork of higher quality for human consumption and lard of higher quality for technological processing.
